Six Bean Summer Salad

Serves  6-10

 

Background:

This is a great salad for picnics, parties and family get-togethers. It makes a lot, so please share it with neighbors and guests. This salad also keeps well in the refrigerator. It is super healthy and filling and is easy and fast to prepare.

Ingredients:

One can each black beans, Garbanzo beans (Chickpeas), green beans, kidney beans, pinto beans, small white beans and a can of sweet corn (about 16 oz. each)

1 bunch of green onions, chopped

5 cloves garlic, minced

½ cup cilantro, chopped

3 tablespoons fresh lime juice

½ cup extra-virgin olive oil

Salt and pepper

 

Method:

Pour each can separately into a colander and wash thoroughly and place in a large bowl, rinsing the green beans last because they are the most fragile. Finely chop the garlic, cut the green onions into rings including the fresh green sections and coarsely chop the cilantro and place in the bowl. Add the extra-virgin olive oil, lime juice and salt and pepper to taste and gently mix and serve. This is even better the next day as the flavors meld.
