Primavera Pasta Salad

Serves 6-8

 

Ingredients:

1 lb. rotini, bowties, shells, or penne

1 pint cherry tomatoes, halved

2.25 oz. can sliced olives, drained

8 oz. mini mozzarella balls

¼ cup shredded parmesan cheese

3 oz. salami, diced

3 tbsp. parsley, chopped

1 small shallot, minced

⅓ cup sliced roasted red bell peppers

⅓ cup artichoke hearts, chopped

1 tbsp. lemon juice

1 tsp. sea salt

½ tsp. ground black pepper

1 tsp. garlic powder

1 tsp. onion powder

1 tbsp. Italian seasoning

⅔ cup olive oil

 

Method:

Bring a large pot filled with water to a boil. Add the pasta and cook according to the package’s directions. Once cooked, drain the pasta and rinse with cold water.

Refrigerate while preparing the remaining ingredients.

Combine everything, starting with the olive oil and seasonings, in a large mixing bowl and toss until evenly coated.
