French Chocolate Mint Cups
French Mint Cups
Serves 10-12
Ingredients:
1 cup butter, softened
2 cups confectioners sugar
3 oz. bakers chocolate
4 eggs
1 teaspoon peppermint extract
2 teaspoons vanilla
2 cups vanilla wafers
Method:
Line a cupcake tray with cupcake tins. Crush the vanilla wafers in a plastic bag. Put 1 tablespoon of crushed wafers into each cupcake tin, making sure to reserve some for topping. Melt chocolate over the stove in a small saucepan or double boiler. In a large bowl beat together butter, confectioners sugar, and then the melted chocolate. Add eggs and mix to combine. Then add peppermint and vanilla and mix well. Fill each tin generously with mixture, making sure each mint cup has a nice filling presentation. Sprinkle reserved wafer over the tops of each cup. Freeze for 4 hours or overnight. Serve cold right out of the freezer.
